Sweet Potato Queso
1 package 8 oz. Shredded Velveeta Cheese
1 7 oz. can green chiles
Cumin, paprika, and chili powder to taste
1/4 cup of sautéed onions chopped
1 tbsp garlic chopped
1 1/2 cups of milk
1 cup mashed sweet potato
Homemade tortilla chips:
Preheat oven to 375 degrees
Brush both sides of 12 (6-inch) corn tortillas with 1 Tbsp. canola oil. Stack tortillas and cut into quarters: arrange in a single layer on 2 large rimmed baking sheets.
Sprinkle evenly 1/2 tsp. each kosher salt and chili powder. Bake until crisp and lightly golden, about 13 minutes, rotating baking sheets between top and bottom racks halfway through bake time.
